Even with engineering background it's still lengthy and lengthy means it takes lot of strength and time instead of this you have a fair choice of gender studies it also scoring and short in syllabus and you will cover it in 10 to 15 days max

Nice ops dear. Go through the pervious papers and syllabus and a have bird eye on them you will have an idea about the papers and also about the topics. There are books but it's better to prepare topics instead​ of reading out the whole book. Prepare hot and trending topics. Start with IR .

Excellent choice.
Sociology & psychology has same scoring trend. Selecting depends upon your background and interest. See syllabus of both and than choose.

There are threads for all subjects in the home page of forum. Open them and check few relevant threads. You can find book recommendation, links of E-books, notes etc there. About books always ask question in relevant section of subject if you cannot find required thread.

Prepare English from start (both subject). Take other subjects one by one and prepare. Make time period for each subject and leave time for at least two revisions till exam date i.e. 15th Feb.

Environmental Sciences is lengthy no doubt but being a science student it will be easy for you. Also it will help in GS & A paper. Scoring trend in ES is high as compared to GS and you can verify it from DMC's of students who have cleared CE-2016.

Gender study is not lengthy but you do not have background in this subject and scoring level is not so high. Score if candidates in CE-16 was average.

Final choice is yours.

Agreed Anum Zara Mam but as you see gender studies is a new subject and now it's trending so it is now scoring now. But as you say it's all depend on aspirent

Yes it totally depends on aspirant but as per his background ES is best choice for him. By the way ES is also a new subject and we only have score trends of CE-16 available for comparing both. I think you will also agree that as per CE-16 result ES turned out to be more scoring. Result of GS was average. I have switched my subject due to very same reason. Also for ES 1 book and internet is enough while for ES one book is not enough. I am telling by my experience with both subjects.
