I am still thinking about US History as I have no interest in it but on the other hand Islamic History (in which I am interested) has a gigantic syllabus with a lot of details.

I was thinking,

Chemistry - bachelors in biotechnology so have some background
Economics - interesting topic + was my my minor in University
History of Pakistan and India
Constitutional Law

still deciding but these look the most promising

Surely, US history has short syllabus and it is interesting too.

Chemistry? Its a technical, filled with a lot details and equations. You might need to reconsider it as a optional.
