From the History portion, I will recommend you to go for European History. It will take only a week more than US History. But, it's average score is 10 marks more than the US history. Apart from that, it is a non-traditional subject i.e not many people opt for it and there is little chance of it being targeted. Since 2018, US History has not given a good score. On the other hand, the score of Europeans has risen.
Indo-Pak and Islamic history are biased and don't score that well.

I changed my mind at the end and opted Indo Pak History instead of US History. The questions were as if from Pak Affairs. Waiting for the result. But I am pretty sure that it was a wise decision.
Rest it depends on your interest.
reading US history didn't ignite curiosity in me but Indo Pak history did.

Secondly, Political Science does overlap with Constitutional Law. But, the dimension of C.Law is far more expanded. If you are lucky, you might be asked the same questions as Pol Science. Otherwise, the examiner of C.Law has a lot of topics at his disposal which he uses to make the paper very different. See 2021 paper of C.Law.
International Law goes well with IR. However, its score for the past few years has remained in the range of 40s.
I would recommend you to go for C.Law but devote considerable time to the subject ( a month or more). This will strengthen your Pol Sci as well.

You are absolutely right. If you have prepared post-1857 well you can easily cover 4 questions in paper and it will also help you in Pak Affairs. However, as I mentioned earlier, this subject is very much biased, and the only time I saw a good score in it was in 2018 ( someone scored 70 in it). After that, I haven't seen it scoring that well.

Sociology is a better subject than geography. It gets targeted after every 4 years ( 2020, 2016, 2012, 2008). We can assume that it is a safe subject till excluding 2024. You can also consider Anthropology

I had opted for GPP earleir. This subject is very much applied and the worst thing is that their isn't any good source available for its preparation.
