I have been watching my father in the same state since my childhood
OR
I have been seeing my father in the same state since my childhood

Both are incorrect.
For correct expression use "Looking" instead.

Dear 2nd sentence looks correct as we can neither watch nor look continuously for such a long time. i.e (since childhood).
so 2nd sentence looks correct.
I have been seeing my father in the same state since my childhood.

Well I can, categorically, observe two points in your sentences:

First, you are trying to say that you have been seeing( dekh rahi ho) your father in a particular state since your childhood.

Secondly, you mean to say, you have been looking after (dekh bhaal) your father since your childhood.

If your first sentence is the real thought of yours then the correct sentence is:

I have been seeing my father in the same state since my childhood.
