Try MS OneNote

You don't have to save. OneNote automatically saves the notes every 30 seconds, or whenever you close the application or a section.

You can configure how often you want OneNote to save by going to Tools | Options | Open and Save.

If you really want to save immediately, though, you can just press CTRL+S to force a save.
