I also prefer Pen over a keyboard...First i jot the keypoints using a pen on a notebook (if i dont find a notebook then even any contact card would do) and after making several clusters of arrows describing each important aspect (understandable by myself only) I move towards the keyboard. Though reading all the stuff i write is convenient for me only, you may call it "Encoding"..
