That is not called 'theory' in scientific language. That is called hypothesis. A hypothesis is something that has little to no evidence in its support and thus there are different opinions. When considerable evidence is accumulated, it becomes a theory. If it can be expressed in mathematical form, it is a law. Evolution is a theory because it is not mathematical. Gravity is a law because it can be expressed mathematically.
But still, if there is any scientific theory that contradicts evolution, please enlighten me about it.
As for doubts, I don't think there is any scientist who would that he/she is 100% sure of anything at all. That, again, is the beauty of science.
