can any one tell the best source for covering the chapter probability

S.M Chaudhry's book is sufficient for preparing probability questions.

What about English writers, those suggested by FSPC Rules and Syllabus document? Why not to go for them? Why Sher.M Chaudary?

The books written by foreign authors are good but one will have to study multiple books for different sections as per syllabus. SMC's books are simple and trouble-free as per requirement of syllabus. These books can be prepared in short time period.
