Remove SHOULD.

Dear, it is not necessary that the sequence follows SUB+VERB+OBJ. Writing has many styles: you can change the position of words to put spice in your language. It is, in grammatical usage, correct style. You will often find this type of writing in various books and newspapers.
Secondly, it is also correct grammatically if we write in following sequence:
OBJECT+VERB+SUBJECT
Such as:
The days are gone.(CORRECT)
Gone are the days.( CORRECT FORM with more emphasis)
I hope that you have got my point.

Buddy the style you're talking about is said to be inversion of verb
For example,Under no circumstances has she compelled me to finish the project.It has nothing to do with your ascribed explanations.

He complied with the requirement that all graduate students should write a thesis.Kindly invert the sentence i.e.verb+subject+object

whats wrong with these two:
1.A ten-feet long snake made people run here and there.
2.Enclosed with this letter was a signed Affidavit and a carbon copy of his request to our main office.

in the second sentence the letter was attached with two papers, an affidavit and a carbon copy of his request. Hence was should be replaced by were, the plural form

your first sentence correction is absolutely right , and explanation is also fine.

But second sentence has another error as well,which is known as error of dangling modifiers.in such type of sentences what reader perceive is quite awkward like
Your sentence is read as a letter is enclosed along with other paraphernalia; in order to correct such a type of errors we place immediately modifier along with modified.
Hence correct sentence would be; This letter enclosed a signed affidavit and a carbon copy of his request to our main office.
If there is any discrepancy than come up with proof.Hope it will fix the issue.Tuck it!

DEAR URSULA
the writer in the second sentence has stressed the enclosure of the papers. you cannot prove it wrong by any means. you can consult with someone expert in English grammar. there is only one mistake in the sentence and that is of the singular form put in place of a plural form.
